Vegan Chocolate Banana Muffins

This recipe for vegan chocolate banana muffins calls for oatmeal and bananas - but don't let that trick you into thinking that it's healthy! Being egg-free and dairy-free, however, it is lower in fat than most chocolate muffin recipes, and being vegan, it is cholesterol-free as well.

Ingredients:

  • 1 1/4 cups flour
  • 1 cup oatmeal
  • 1/2 cup brown sugar, firmly packed
  • 1/3 cup cocoa
  • 1 tbsp baking powder
  • 1/4 tsp baking soda
  • 2-3 ripe bananas, mashed
  • 1/2 cup soy milk
  • 1/3 cup vegan margarine, melted
  • 1 tsp vanilla

Preparation:

Pre-heat oven to 400 degrees and line or grease a muffin pan.

In a large bowl, combine the flour, oatmeal, brown sugar, baking powder and baking soda.

In a separate bowl, whisk together the banas, soy milk, vegan margarine and vanilla. Combine with the dry ingredients and stir just to combine.

Fill each muffin about 2/3 full with batter. Bake for 20 - 25 minutes, or until inserted toothpick comes out clean.

Vegetarian "Chicken" Masala Curry Recipe

Ingredients:

  • 1 vegetarian Chicken Free Chicken, cut into 2 inch cubes
  • 1 onion, diced
  • 1 tsp garlic, crushed
  • 1 tsp ginger, crushed
  • 1-2 tbsp chicken masala spice
  • 1/2 cup tomato, finely chopped
  • 1 tsp fresh cilantro, choped
  • 1 tbsp olive oil
  • 1 cup water

Preparation:

Sautee onions, garlic and ginger in oil until lightly browned. Add Masala spice and sautee 2 more minutes. Add tomatoes. Cook 10 minutes. Add Chicken Free Chicken and cook an additional 5 minutes. Add water as necessary. Serve over rice if desired.

Vegetarians, Yes You CAN Eat at Burger King


When I asked the girl at the Burger King Counter if the Veggie Burger on the menu was any good I never expected this cute, young girl working the counter at a burger joint to reply:

"I'm a vegetarian. I love it. It's better with cheese."

A vegetarian working at Burger King seems like an oxymoron, but it's okay. There's no such thing as Tofu King yet.

Since I became a vegetarian a month ago, I have been doing well with finding options at every place we dine. I have been avoiding fast food as much as possible anyway, but one late night we were starving. I was expecting to get a fish sandwich (I didn't rule that out of my diet yet), but when I saw that Burger King offered a BK Veggie Burger from Morningstar, I was thrilled! McDonalds, which has many options to healthy eating, has not yet added a veggie burger to their grilled selection, and Wendy's does not even offer a fish sandwich anymore.

So, I was very delighted to learn that Burger King now offers something exclusively for vegetarians. When Dave and I got to our booth and unwrapped our sandwiches, I realized that my BK Veggie Burger didn't look that much different than his Whopper. They both were on the same bun, topped with lettuce, tomato, onions and mayo. Only, his patty was made of meat and mine with a slew of yummy vegetables.

The BK Veggie Burger had visible veggies, and was just fabulous. My favorite veggie burger by far is Morningstar's Black Bean Burgers, however this version at Burger King was great. On the side, I had an order of Burger King's brand new cheese filled tater tots, which were to die for. They were oozing with melted cheese and the chunky potato filling was tasty. I topped off my quick meal with a caramel swirl cheesecake. I forgot how great Burger King's cheesecakes were!

Vegetarian Soy "Chicken" coming to KFC in Canada!

Ok America and the rest of the world, now it's time for you to catch up with Canada. Great news for vegetarians and vegans in Canada: with a little help from the folks over at PeTA, all 461 Canadian KFC locations will soon offer a vegetarian and vegan chicken substitute on their menus. So if you're a vegetarian or vegan who loves and convenient food, this is the best news since the Burger King Veggie Burger (which I confess to eating on occasion). But the good news doesn't just stop with the deep-fried soy chicken goodness. Along with adding this hopefully tasty new vegan chicken to their menu, KFC has also agreed to completely reform the way it's animals used for food are killed, using a more humane method of gassing. In Canada, that is. I'm waiting for KFC branches in the USA and the rest of the world to follow suit. Either that, or it's time for a road trip to Canada soon!
